Lentil and Cabbage Soup

Serves 6-7

Ingredients:

1 cup dry lentils

1/2 onion, finely cut

2 carrots, cut

1 celery rib, chopped

1/2 head cabbage, sliced

2 garlic cloves, crushed

3 cups vegetable broth

1 cup water

2 tbsp olive oil

1 tbsp savory

1 tsp paprika

salt and pepper, to taste

Directions:

In a large soup pot, heat olive oil over medium-high heat and gently sauté onion and garlic for a minute or two. Add in celery, carrots and cook for an addition 2 minutes.

Once the onion is tender, add paprika, savory, dry lentils and stir well. Stir in 3 cups of vegetable broth, and 1 cup water. Bring soup to a boil, add cabbage, lower heat, and simmer for about 30-40 minutes, or until the cabbage is tender.
